Roasted Pork Tenderloin w/ Zucchini Noodles

Rosy, blushing, pink....and no, I am not talking about makeup. And yes, the pork is cooked.
I can't say enough nice things about the humble pork tenderloin. A very underutilize and extremely affordable cut. Getting a nice, hard sear is key to lock and retain its juices. Then its as easy as popping it in the oven to finish. Be sure to check the internal temperature for desired doneness with a digital thermometer. You can already tell it's going to be moist and juicy. The tenderloin cut is not known for being the most flavourful; but it sure can handle some stronger flavours.

The pork tenderloin is complimented perfectly with the Rosemary Balsamic Onion Butter. The zucchini noodles have been quickly sautéed and tossed with the Garlic Lemon Brown Butter to give it a nice gentle seasoning; not to overpower the taste of the pork.
